Recipe
- 1 cup roughly chopped snap peas
- 1 cup London dry gin (I used Beefeaters)
Combine and let sit for a couple hours. Strain the gin through a coffee filter and bottle.

Homemade snap pea infused gin, mmmmm. I first had a taste of snap pea flavors with gin at PCH in an absolutely delightful cocktail, so thought I’d try out an infusion. It sounds a bit strange, but man is this one of the most awesome flavor combos! Snap peas are sweet, fresh, and quite vegetal, and wow can this gin make some amazing cocktails! Infusions are a super fun and easy way to spice up your otherwise plain spirits without needing to invest in specialized bottles of flavored alcohol (a lot of which taste less than stellar anyway).
The process involves soaking your flavoring agent of choice (fruits, vegetables, herbs, spices, use your imagination!) in a high proof spirit. As time passes, the alcohol will pick up the flavors in the compound through the osmotic transfer of molecules between the substances along with alcohol molecules’ ability to dissolve water and fat soluble flavors, leaving you with a naturally flavored and delicious spirit that generally should last indefinitely as long as you’ve strained out all particles and leave only the clear alcohol. The length of time required will largely depend on what you’re using and how strong of a flavor you want (generally anywhere from a couple hours to weeks), so have fun experimenting!
