Recipe
- 1.5oz overripe banana infused bourbon (I used Cooper’s Craft)
- .5oz peaty Islay scotch (Ardbeg 10)
- 1-2 tsp of maple syrup (adjust based on your sweetness preference)
- Couple dashes of Bittered Sling Lemon-Marrakech bitters (sub: Regan’s orange bitters)
Stir all ingredients with ice and strain over a fresh large cube. Express the oils from a citrus peel over the top of the drink and the rim of the glass.
To infuse the bourbon, mash up an overripe banana, and cover it with some bourbon in a close jar. After a few hours up to a day, strain the mixture through a coffee filter.

I smell smoke, wood, and…bananas. Any Arrested Development fans out there? Definitely one of my favorite scenes ever. I’m burnin’ down the banana stand today with this Old Fashioned variant. It’s sweet and oak-y with the banana-infused bourbon, with a touch of smoky Islay whisky to balance out the tropical overripe caramel-y banana richness.
I hate food waste of all kind, so when I saw a waaaay (like, WAY) overripe black banana sitting on the counter, and no desire to bake any banana bread, I mashed it up in a jar and poured in some bourbon to cover. Pour it through a coffee filter after a few hours and you’ve got yourself a tasty treat.
(PS – pro tip: if you rinse a banana under water right when you get it, you won’t get any fruit flies when it starts ripening).
