Falcon Spirits Botanica Spiritvs gin. I recently visited Falcon Spirits and had an incredible time talking with the founder and master distiller, Farid. With what started as a passion project, Farid’s passion for the art of craft distilling and experimentation radiates in everything he produces. That, combined with his deep scientific expertise (he spent much of his career as a trained biochemist), flavor and mixology insights (he also bartended as a side gig), and it’s easy to see how his distillery is producing some killer products.
Their flagship gin is highly aromatic with notes of fresh citrus and cucumber with a somewhat warm spicy botanical blend. The cucumber notes come from the creative usage of infused cucumber water to cut the distilled spirit (instead of the typical use of regular water). The aroma is strongly fragrant and the pine-y juniper sits in the background. Developed with cocktails in mind, this gin is a true beauty to pair with fresh juices, tonics, and other spirits/liqueurs.
Unlike gins created from a single distillation of the botanicals, this gin blends several separate distillations. Not only does this allow for more granular control over the influence of each botanical on the end product, but also ensures that each seasonal ingredient is harvested and distilled only when it’s in season and freshest (in contrast, creating only a single distillation requires that all ingredients be in season at the same time, or that some ingredients are less fresh).
