I’ve been loving my snap pea infused gin, so I just had to see what kind of magic it could create in a Negroni! Negronis are traditionally created with equal parts of gin, sweet vermouth, and a bittersweet liqueur (i.e. Campari) – a recipe blueprint that leaves lots of opportunities for interesting combinations!

Considering how well citrus and snap peas pair as a super fresh combo, I went with Aperol for my bittersweet component to pair with the snap pea gin (Aperol is sort of like Campari’s lighter fruitier cousin). I didn’t want to weigh down the light and refreshing combination with a heavy sweet vermouth, so I opted for the Dolin Blanc – a clear vermouth that sits wonderfully between a dry and rouge that has pleasant sweetness on the palate without being overwhelming.

The end product is a super refreshing cocktail that carries the essence of the classic Negroni with a crisp bite from the snap peas. Oh, and that lovely Aperol orange shade. An extra splash of champagne wouldn’t hurt either 😉
