Recipe
- 1oz gin (Barr Hill)
- .5oz aged agricole rum (Trois Rivieres TRSR)
- .5oz lemon juice
- .5oz honey syrup (2:1 honey/water ratio)
- Pinch of sea salt
- Olive oil
- Orange blossom water (Cortas)
Rinse a coupe glass with a few drops of orange blossom water. Shake all other ingredients except the olive oil. Scatter a few drops of olive oil over top and add a delicious (Castelvetrano) olive.

Gearing up for the 3rd annual Bee’s Knees Week (September 23-29) with this vegetal fresh twist on the classic! I always see this drink combined with lavender and wanted to do something totally opposite.
Honey, lemon, and gin make up the classic Bee’s Knees cocktail, a drink that dates back to American Prohibition in the 1920s. Although alcohol was illegal, the Prohibition era brought about many of what are now considered classic cocktails, stemming from the creativity in employing sweeteners and flavorful modifiers to mask the harsh and questionable (aka foul) spirits available only from home distillation attempts and backdoor means.
Luckily, we can recreate those classics today using MUCH better products. Like this beautiful gin enhanced with local raw honey. If people could make a bathtub gin Bee’s Knees palatable, you know this is a fail-safe recipe. 😉
