About

I finally picked up a bottle of Suze gentian liqueur, a 19th century French herbal spirit, and I had to go for a white Negroni. The Negroni is a classic bittersweet cocktail that is a popular favorite amongst cocktail enthusiasts, and is traditionally composed of gin, sweet/rouge vermouth, and Campari to give it its signature red color. I love a regular Negroni, but honestly one of the reasons I don’t have it too often is because I find it a bit on the heavy/sweet side, so this variation was thoroughly enjoyable.

This version replaces Campari with the bittersweet Suze liqueur, and I’ve switched out the traditional red vermouth for Dolin Blanc, a sweet but clear and floral vermouth. I’ve also upped the gin ratio for an overall drier (less sweet) flavor profile. The outcome is bitter and delicious.
