Lychee Lights

Recipe

  • 2oz light rum (Montanya Platino)
  • .5oz lemongrass infused simple syrup* (regular simple syrup is fine too)
  • .75oz lime juice
  • 3 fresh lychees (seeds removed)

In a shaker tin, muddle the lychees with lime juice and syrup. Add rum and ice and shake shake shake. Double strain into an ice cold glass and enjoy!

*To make the lemongrass syrup, bring crushed lemongrass stalks to a gentle boil with equal parts sugar and water. Simmer for 5-10 minutes, then let cool and rest overnight to let the flavor continue to infuse. Strain and bottle.

Fresh lychees! If you ever have a chance to get ahold of fresh lychees, don’t pass it up! They are a world of difference from the canned type that comes in syrup (think: canned peaches vs fresh peaches)

Anyway, you really can’t go wrong with a jazzed up daiquiri, so here we are.
