Recipe
- 1.5oz gin (Barr Hill honey gin)
- .75oz strawberry fennel syrup (Royal Rose)
- .75oz lemon juice
- Spray (or few drops) of absinthe
Shake the gin, syrup, and lemon juice with ice. Coat the inside of a coupe glass with a few drops or an atomizer spray of absinthe. Strain the drink into the absinthe-coated glass.

I grew up associating fennel with Italian sausage pizza. Turns out it pairs well with berries too! This strawberry fennel syrup is delicious – it actually captures the tartness of fresh strawberry and not just the cooked strawberry jam flavor. The licorice/anise flavors of the absinthe really amplify the fennel in the syrup to add the perfect balance of savoriness to an otherwise simple fruity drink.
