Recipe
- 2oz London Dry gin (I used Beefeater)
- .5oz Rum Fire (a tinnnnyy bit goes a looong way)
- .25oz passionfruit syrup (Small Hand Foods)
- 4oz tonic water (I used Fevertree Naturally Light)
- Couple drops of saline solution (salt&water)
- Few dashes of Bittermens Elemakule tiki bitters
Combine all ingredients in a tall glass with ice. Stir well and drink up
*to make the saline solution, dissolve 1 tsp of salt in 1oz of water. Store in a dropper bottle. Alternatively, just add a few sprinkles of salt in the drink and stir well to ensure it dissolves

More G&T variants! Sooo, I FINALLY made it to Whitechapel after putting it off for way too long. And man, it was as incredible as I imagined. Whitechapel is a gin bar in San Francisco, co-created by Martin Cate from Smuggler’s Cove. It’s basically a tiki bar, but with gin. It’s got all the critical tiki elements of a windowless interior creating a sense of escapism, awe-inspiring decor that literally transports you to London Underground in a different era, and fabulously garnished drinks (my drink came with a pipette of Campari, what?).
While there, I tried the “Tiki G&T,” which was essentially a gin&tonic enhanced with Smith&Cross Jamaican rum, falernum, and passionfruit. I came home, wanted it again, and decided to take that up a notch and created this version. HOLY CRAP, this is deeeelicious. If you like gin and tonic and you dig some funk, go make this right now! Choose the funkiest Jamaican rum you own and watch it work its magic.
